brown rice

1 cup

can coconut milk



1/2 teaspoon

ground black pepper

1/4 teaspoon

olive oil

1 tablespoon

chopped onion

1/4 cup

chopped bell pepper

1/4 cup

chopped celery

1/4 cup

chopped carrots

1/4 cup

chopped mushrooms

1/4 cup

chopped fresh parsley

1/4 cup



Step 1:

In a medium saucepan, bring the coconut milk to a boil.

Step 2:

Add the brown rice, salt, and pepper. Stir to combine.

Step 3:

Reduce the heat to low and cover the pan. Simmer for 25 minutes, stirring occasionally.

Step 4:

Meanwhile, heat the olive oil in a large skillet over medium heat.

Step 5:

Add the onion, bell pepper, celery, carrots, mushrooms, and parsley. Cook for 5 minutes, stirring occasionally.

Step 6:

When the rice is done, add the vegetables to the pan and stir to combine.

Step 7:

Serve the brown rice cooked in coconut milk warm. Enjoy!
