Wash and cut the brinjals and potatoes into cubes.
Heat oil in a pan and add cumin seeds and mustard seeds.
When the seeds start to crackle, add the brinjal and potato cubes.
Add turmeric powder, red chilli powder, coriander powder, garam masala and salt.
Mix everything together and cook on medium heat for 10-15 minutes, stirring occasionally.
Once the vegetables are cooked, add the chopped coriander leaves and mix.
Serve hot with chapatis or rice. Enjoy!
