mustard seeds

1/2 teaspoon

cumin seeds

1/2 teaspoon

turmeric powder

1/2 teaspoon

red chilli powder

1 teaspoon

coriander powder

1 teaspoon

garam masala

1 teaspoon

Salt to taste

Directions

Step 1:

Wash the brinjal and potatoes thoroughly and cut into cubes.

Step 2:

Heat oil in a pan, add mustard seeds and cumin seeds, let it splutter.

Step 3:

Add the cubed brinjal and potatoes to the pan.

Step 4:

Add turmeric powder, red chilli powder, coriander powder, garam masala, and salt to the vegetables and mix everything well.

Step 5:

Cover the pan and let it cook on medium heat for about 20 minutes while stirring occasionally.

Step 6:

Once the brinjal and potatoes are cooked and well coated with spices, remove the pan from the heat.

Step 7:

Serve the brinjal potato dish hot with Roti/Chapati or rice.
