Heat oil in a pan over medium heat.

Add the brinjal cubes and sauté for a few minutes.
Add turmeric powder, coriander powder, red chilli powder, garam masala, amchur powder, jaggery and salt.
Mix everything together and cook for 10-15 minutes, stirring occasionally.
Add the chopped coriander leaves and mix.
Serve hot with chapatis or rice.
