large brinjals, cut into cubes

2 tablespoons

cumin seeds

1 teaspoon

mustard seeds

1 teaspoon

turmeric powder

1 teaspoon

red chilli powder

1 teaspoon

coriander powder

1 teaspoon

garam masala

1 teaspoon

Salt to taste

chopped coriander leaves

Directions

Step 1:

Heat oil in a pan over medium heat.

Step 2:

Add cumin seeds and mustard seeds and let them splutter.

Step 3:

Add the brinjal cubes and stir-fry for a few minutes.

Step 4:

Add turmeric powder, red chilli powder, coriander powder, garam masala and salt.

Step 5:

Stir-fry for a few minutes until the brinjals are cooked.

Step 6:

Garnish with chopped coriander leaves and serve hot.
