Heat oil in a pan over medium heat.
Add the onions and sauté until golden brown.

Cover the pan and cook for 10 minutes, stirring occasionally.
Uncover the pan and cook for a few more minutes until the brinjal is cooked through.
Garnish with fresh coriander leaves and serve hot.
