Ingredients

large brinjals, cut into cubes

onion, finely chopped

tomatoes, finely chopped

cloves garlic, minced

ginger, minced

1 teaspoon

cumin powder

1 teaspoon

coriander powder

1 teaspoon

garam masala

1 teaspoon

red chilli powder

1 teaspoon

turmeric powder

1/2 teaspoon

oil

2 tablespoons

Salt to taste

chopped fresh coriander leaves

Directions

Step 1:

Heat oil in a pan over medium heat.

Step 2:

Add the onions and sauté until golden brown.

Step 3:

Add the garlic and ginger and sauté for a few seconds.

Step 4:

Add the tomatoes and cook until soft.

Step 5:

Add the cumin powder, coriander powder, garam masala, red chilli powder and turmeric powder and mix well.

Step 6:

Add the brinjal cubes and mix well.

Step 7:

Add salt to taste and mix well.

Step 8:

Cover the pan and cook for 10 minutes, stirring occasionally.

Step 9:

Uncover the pan and cook for a few more minutes until the brinjal is cooked through.

Step 10:

Garnish with fresh coriander leaves and serve hot.
