Rinse the brinjal
Prick the brinjals with a fork and keep it for roasting on direct flame on the stove-top. Keep the flame on medium and cook until brinjal is tender.
Remove the brinjals from the flame and let them cool. Once cooled, peel off the skin and mash the flesh.
Heat the oil in a pan over medium heat. Add the cumin seeds and let them sizzle.
Add the chopped onion and sauté until golden brown.
Add the chopped tomatoes, green chilli, coriander powder, red chilli powder, garam masala, amchur powder and turmeric powder. Sauté for a few minutes.
Add the mashed brinjal and mix well. Cook for 5-7 minutes.
Add salt to taste and mix well.
Garnish with chopped coriander leaves and serve hot.
