Peel and cut the potatoes into cubes.
Boil the potatoes in a pot of salted water until they are tender.
Drain the potatoes and set aside.
Heat the oil in a pan over medium heat.
Add the cumin seeds and mustard seeds and let them splutter.
Add the green chillies, ginger-garlic paste and sauté for a few seconds.
Add the boiled potatoes and mix well.
Add the cumin powder, coriander powder, turmeric powder, red chilli powder, garam masala, amchur powder and salt to taste.
Mix everything together and cook for a few minutes.
Garnish with chopped coriander leaves and serve hot.
