Soak the black lentils in water for at least 2 hours.
Drain the water and set aside.
Heat oil in a pan over medium heat.
Add cumin seeds, coriander powder, turmeric powder, red chili powder, garam masala, amchur powder, and salt. Stir and cook for a few seconds.
Add the ginger-garlic paste and stir.
Add the chopped onion and cook until it is lightly browned.
Add the chopped tomatoes and green chilies and cook for a few minutes.
Add the soaked black lentils and stir.
Add 2 cups of water and bring to a boil.
Reduce the heat to low and simmer for 15-20 minutes, or until the lentils are cooked.
In a separate pan, heat oil over medium heat.
Add cumin seeds, mustard seeds, and asafoetida.
When the seeds start to splutter, add the tempering to the cooked black dal.
Garnish with chopped cilantro and serve hot.
