Wash and cut the bitter gourds into thin slices.
Heat oil in a pan and add cumin seeds, mustard seeds and fenugreek seeds.
When the seeds start to crackle, add the bitter gourd slices and sauté for a few minutes.
Add turmeric powder, red chilli powder, coriander powder, garam masala and amchur powder.
Mix everything together and cook for 5-7 minutes or until the bitter gourd slices are cooked.
Add salt to taste and mix well.
Garnish with chopped coriander leaves and serve hot.
