Biriyani Rice is a fragrant, flavorful rice dish popular in India and Pakistan. Don’t get it confused with a proper biryani. It is simply rice cooked with spices and finished with some fried onions, nuts and fresh herbs. There are many variations of biryani rice and one of them is famously called as Kuska Rice. This Biryani Rice goes well with curd, raita, vegetarian or non veg curries.

Wash and soak the Basmati Rice for 30 minutes.
Heat Ghee and Oil in a pressure cooker.
Add Onions and Green Chillies and sauté until the Onions turn golden brown.
Add Ginger-Garlic Paste and sauté for a few seconds.
Add Coriander Powder, Cumin Powder, Red Chilli Powder, Garam Masala and Turmeric Powder and sauté for a few seconds.
Add Mixed Vegetables and sauté for a few minutes.
Add the soaked Basmati Rice and sauté for a few minutes.
Add Water and Salt and mix well.
Close the lid of the pressure cooker and cook for 2 whistles.
Once the pressure is released, open the lid and fluff the Biryani Rice with a fork.
Garnish with Fresh Coriander Leaves and serve hot.
