Chicken Biryani is a popular Indian dish made with chicken, rice and a blend of spices. It is a one-pot dish where marinated chicken is cooked together with the rice. It is popular throughout the Indian subcontinent, as well as among the diaspora from the region. The dish is loaded with rich flavors and can be accompanied with raita (yoghurt) or a hard boiled egg.

Rinse the rice under cold running water until the water runs clear. Soak the rice for 30 minutes, then drain.
Heat oil in a pan, add onions and sauté until golden brown. Add ginger-garlic paste and sauté until raw smell fades away.
Add tomatoes, green chilies, and sauté until tomatoes turn mushy.
Add chicken, turmeric powder, chili powder, Biryani masala powder, and salt. Mix well and cook until chicken turns soft.
Add yogurt, mix well and cook until the oil separates.
Add drained rice, water and bring it up to a boil. Lower the heat to simmer, cover the pan and cook until rice is fully cooked.
Chicken Biryani is ready to be served hot with a side of raita or hard boiled egg.
