Wash and soak the Basmati Rice for 30 minutes.
Heat Ghee and Oil in a large pot. Add Onions and Green Chillies and sauté until golden brown.
Add Ginger-Garlic Paste, Coriander Powder, Cumin Powder, Red Chilli Powder, Garam Masala, and Turmeric Powder. Sauté for a few minutes.
Add the Mixed Vegetables, Cashew Nuts, Raisins, Fresh Coriander Leaves, and Fresh Mint Leaves. Sauté for a few minutes.
Add the soaked Basmati Rice and Salt to taste. Sauté for a few minutes.
Add 2 cups of Water and bring to a boil.
Reduce the heat to low and cover the pot. Cook for 15-20 minutes or until the Rice is cooked.
Serve the Biryani hot with Raita or any other accompaniment of your choice. Enjoy!
