Soak the basmati rice in water for 30 minutes.
Heat ghee and oil in a large pot. Add the onions and fry until golden brown.
Add the green chillies, ginger-garlic paste, red chilli powder, turmeric powder, coriander powder and garam masala. Fry for a few minutes.
Add the lemon juice, mixed vegetables, yogurt, cashew nuts, raisins and salt. Fry for a few minutes.
Add the soaked basmati rice and mix well.
Add 4 cups of water and bring to a boil.
Reduce the heat and simmer for 15 minutes or until the rice is cooked.
Garnish with coriander leaves and serve hot.
