Heat oil in a pan over medium heat.
Add cumin seeds, mustard seeds and fennel seeds and fry for a few seconds.
Add coriander powder, turmeric powder, red chilli powder, garam masala, amchur powder and kasuri methi and fry for a few seconds.
Add onions, green chillies, garlic and ginger and fry until the onions are golden brown.
Add tomatoes and fry until they are soft and mushy.
Add bhindi and fry for a few minutes.
Add salt to taste and mix well.
Cover the pan and cook for 10 minutes or until the bhindi is cooked.
Garnish with chopped coriander leaves and serve hot.
