Wash and dry the bhindi. Cut off the ends and slice into thin rounds.
Heat oil in a pan over medium heat. Add cumin seeds, mustard seeds and fennel seeds and let them crackle.
Add the sliced bhindi and stir-fry for a few minutes.
Add the coriander powder, turmeric powder, red chilli powder, garam masala and amchur powder. Mix well.
Add salt to taste and mix again.
Cover the pan and cook for 10 minutes, stirring occasionally.
Once the bhindi is cooked, turn off the heat and garnish with chopped coriander leaves.
Serve hot with chapatis or parathas. Enjoy!
