Ingredients

fresh bhendi (okra)

1 lb

large onion, chopped

cloves garlic, minced

cumin seeds

1 teaspoon

coriander powder

1 teaspoon

turmeric powder

1/2 teaspoon

red chili powder

1/2 teaspoon

garam masala

1/2 teaspoon

vegetable oil

1/4 cup

Salt to taste

Directions

Step 1:

Wash and dry the bhendi. Cut off the tops and tails and cut into 1/2 inch pieces.

Step 2:

Heat the oil in a large skillet over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

Step 3:

Add the onions and garlic and sauté until the onions are soft and lightly browned.

Step 4:

Add the bhendi and stir to combine.

Step 5:

Add the coriander powder, turmeric powder, red chili powder, and garam masala. Stir to combine.

Step 6:

Cover the skillet and cook for 10 minutes, stirring occasionally.

Step 7:

Uncover the skillet and cook for an additional 5 minutes, stirring occasionally, until the bhendi is cooked through.

Step 8:

Add salt to taste and serve hot.
