Wash and dry the bhendi. Cut off the ends and slice into 1/2 inch pieces.
Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds and let them splutter.
Add the bhendi and stir-fry for a few minutes.
Add turmeric powder, red chilli powder, coriander powder, garam masala, amchur powder, salt and sugar. Mix well.
Add the chopped onion and tomato and mix.
Cover and cook for 10 minutes, stirring occasionally.
Uncover and cook for a few more minutes until the bhendi is cooked and the oil separates.
Garnish with chopped coriander leaves and serve hot.
