Wash and dry the bhendi. Cut off the ends and slit them lengthwise.
Heat oil in a pan. Add cumin seeds and mustard seeds. When they start to splutter, add turmeric powder, red chilli powder, coriander powder, garam masala, amchur powder, fenugreek powder and asafoetida.
Add the ginger-garlic paste and sauté for a few seconds.
Add the chopped onion and sauté till it turns golden brown.
Add the chopped tomatoes and sauté till they become soft.
Add the bhendi and mix well.
Add salt to taste and mix well.
Cover the pan and cook on low heat for 10-15 minutes, stirring occasionally.
When the bhendi is cooked, add the chopped coriander leaves and mix well.
Serve hot with chapatis or rice.
