Bharta Brinjal, also known as Baingan ka Bharta, is a classic Indian dish made by roasting a large eggplant until it's soft and smoky, and then mixing it with aromatic spices and vegetables. Ingredients

large brinjal (eggplant)

vegetable oil

2 tablespoons

onion, finely chopped

1

green chillies, chopped

cumin seeds

1/2 teaspoon

turmeric powder

1/4 teaspoon

red chilli powder

1/2 teaspoon

garam masala

1/2 teaspoon

Salt to taste

coriander leaves, chopped

Directions

Step 1:

Start by washing and drying the brinjal. Apply oil to it and roast it directly over fire till it is cooked and the skin starts peeling off. Once cooled, remove the skin and mash the pulp.

Step 2:

Heat oil in a pan and add cumin seeds. Once the seeds start to splutter, add chopped onions and green chillies.

Step 3:

Sauté till the onions turn golden brown. Add turmeric powder, red chilli powder, and garam masala. Mix well.

Step 4:

Add the mashed brinjal and salt. Cook for 5-7 minutes on medium flame.

Step 5:

Garnish with chopped coriander leaves. Serve hot with Rotis or Rice.
