Besan Pakoda is a deep fried Indian snack made with chickpea flour (besan), spices, and vegetables. Pakoda is a popular street food served on roadside stalls along with tea. Vegetables such as onions, potatoes, and giant green chillies are sliced and dipped in a besan batter, then deep-fried until golden brown and crispy. They are served hot with chutney or ketchup.

In a large bowl, mix together the besan, red chilli powder, cumin powder, turmeric powder, garam masala, aamchur, coriander powder, baking soda and salt.
Add the chopped coriander leaves, green chillies, onions, ginger, garlic, curry leaves, coriander leaves, mint leaves, fenugreek leaves, cashew nuts, almonds, raisins, dates, walnuts, peanuts, sesame seeds and coconut.
Mix everything together until it forms a thick batter.
Add the oil and mix it in.
Add water as required to make a thick batter.
Heat oil in a deep pan.
Drop spoonfuls of the batter into the hot oil and fry until golden brown.
Remove the pakodas from the oil and drain on a paper towel.
Serve hot with chutney or ketchup.
