Besan, also known as gram flour or chickpea flour, is a pulse flour made from ground chickpeas. It is a staple ingredient in the cuisines of the Indian subcontinent, including in Indian, Bangladeshi, Burmese, Nepali, Pakistani, and Sri Lankan cuisines. Besan is used with water as a batter to coat vegetables before deep-frying to make pakoras. It is also used as a binding agent in cutlets, kababs, and other snacks. Besan is also used as a thickener in curries and as a flour to make rotis and other flatbreads.

Heat ghee in a pan over medium heat.
Add besan and roast it for 8-10 minutes, stirring continuously.
Add sugar and cardamom powder and mix well.
Cook for another 5 minutes until the mixture starts to leave the sides of the pan.
Remove from heat and let it cool down.
Once cooled, make small balls out of the mixture.
Garnish with chopped almonds and pistachios.
Serve the Besan Ladoo warm or at room temperature. Enjoy!
