lemon juice

honey

1 teaspoon

Dijon mustard

1 teaspoon

Salt and pepper to taste

Directions

Step 1:

Peel and grate the beetroots.

Step 2:

In a bowl, mix together the olive oil, lemon juice, honey, and Dijon mustard.

Step 3:

Add the grated beetroots to the bowl and mix until everything is combined.

Step 4:

Season with salt and pepper to taste.

Step 5:

Add the chopped parsley and mix again.

Step 6:

Serve the beetroot raw salad chilled or at room temperature. Enjoy!
