Ingredients

Beerakayas (Ridge Gourd)

2 tablespoons

mustard seeds

1/2 teaspoon

cumin seeds

1/2 teaspoon

finely chopped onions

2

finely chopped green chillies

2

turmeric powder

1 teaspoon

salt

1 teaspoon

garlic, finely chopped

2 cloves

grated coconut

1 cup

Directions

Step 1:

Peel off the skin of the Beerakaya vegetable and chop into small pieces.

Step 2:

Heat oil in a pan, add mustard seeds, cumin seeds, chopped onions, green chillies and garlic. Saute till the onions turn soft and light brown.

Step 3:

Add the chopped Ridge gourd, turmeric powder, and salt. Mix all the ingredients well.

Step 4:

Cover the pan with a lid and let it cook on medium heat for about 10-12 minutes.

Step 5:

Once the Ridge gourd becomes soft, add the grated coconut and mix.

Step 6:

Cook for another 5 minutes with the lid on.

Step 7:

Serve the Beerakaya vegetable dish hot with roti or rice.
