Begin by roasting the aubergine over direct flame until the skin is charred and the aubergine is soft and cooked. Allow it to cool.
Once the aubergine has cooled, remove the charred skin and mash the pulp.
Heat oil in a pan and add the cumin seeds. Once they begin to splutter, add the onions and garlic and saute until the onions are golden brown.
Add the green chilli, turmeric powder, and red chilli powder. Mix well.
Now, add the tomatoes and cook until they are soft.
Add the mashed aubergine and salt to the pan and mix everything together. Let it cook for 10-15 minutes on low flame.
Finally, garnish the dish with fresh coriander leaves before serving.
