Wash and cut the eggplants into cubes.
Heat oil in a pan and add the chopped onion. Saute until the onion is golden brown.
Add the garlic and saute for a few seconds.
Add the cumin powder, coriander powder, garam masala, turmeric powder, red chili powder, and asafoetida. Saute for a few seconds.
Add the eggplant cubes and mix well.
Cover and cook for 10 minutes, stirring occasionally.
Add the chopped cilantro and salt to taste.
Cook for a few more minutes until the eggplant is cooked through.
Serve hot with chapatis or rice. Enjoy!
