Preheat oven to 375 degrees F.
Place eggplants on a baking sheet and bake for 30 minutes, or until soft.
Remove from oven and let cool.
Peel off the skin and mash the eggplant with a fork.
Heat oil in a large skillet over medium heat.
Add cumin seeds and let them sizzle for a few seconds.
Add onions and garlic and sauté until onions are soft and translucent.
Add mashed eggplant, coriander powder, garam masala, turmeric powder, red chili powder, and salt.
Cook for 5-7 minutes, stirring occasionally.
Add cilantro and cook for another minute.
Serve hot with chapati or rice. Enjoy!
