large onion, chopped


cloves garlic, minced


cumin powder

1 teaspoon

coriander powder

1 teaspoon

garam masala

1 teaspoon

turmeric powder

1 teaspoon

red chili powder

1 teaspoon

amchur powder

1/2 teaspoon

vegetable oil

1/4 cup

Salt to taste

chopped cilantro

1/4 cup



Step 1:

Heat the oil in a large skillet over medium-high heat.

Step 2:

Add the potatoes and eggplant and cook for about 10 minutes, stirring occasionally, until the vegetables are lightly browned.

Step 3:

Add the onion and garlic and cook for another 5 minutes, stirring occasionally.

Step 4:

Add the cumin, coriander, garam masala, turmeric, red chili powder, and amchur powder and stir to combine.

Step 5:

Reduce the heat to low and cook for another 10 minutes, stirring occasionally.

Step 6:

Add salt to taste and stir to combine.

Step 7:

Remove from heat and stir in the cilantro.

Step 8:

Serve hot with chapati or rice. Enjoy!
