Wash and cut the vegetables into small cubes.
Heat oil in a pan and add cumin seeds and mustard seeds.
When the seeds start to splutter, add the chopped green chillies and sauté for a few seconds.
Add the cubed vegetables and sauté for a few minutes.
Add turmeric powder, salt and mix well.
Cover and cook the vegetables until they are tender.
Add the grated coconut and mix well.
Add the curd and mix well.
Cook for a few minutes until the aviyal is thick and creamy.
Serve hot with steamed rice.
