Wash and soak the arhar dal in water for 30 minutes.
Heat oil in a pressure cooker. Add mustard seeds and let them splutter.
Add cumin seeds, asafoetida, and green chillies. Saute for a few seconds.
Add chopped onions and saute until they turn golden brown.
Add ginger-garlic paste and saute for a few seconds.
Add chopped tomatoes and saute until they turn soft.
Add turmeric powder, red chilli powder, coriander powder, garam masala, and amchur powder. Saute for a few seconds.
Add the soaked arhar dal and 2-3 cups of water.
Close the lid of the pressure cooker and cook for 3-4 whistles.
Once the pressure is released, open the lid and mash the dal with a spoon.
Add salt to taste and mix well.
Garnish with chopped coriander leaves and serve hot.
