Heat oil in a pressure cooker.
Add mustard seeds, fenugreek seeds and asafoetida.
Add chopped onion, tomatoes, carrots and green beans.
Saute for a few minutes.
Add turmeric powder, red chilli powder, coriander powder and cumin powder.
Add Arhar Dal and mix well.
Add tamarind paste, jaggery and salt.
Add 2 cups of water and mix well.
Close the lid of the pressure cooker and cook for 3-4 whistles.
Once the pressure is released, open the lid and mix the sambar.
Serve hot with steamed rice.
