Arhar Dal

1 cup

chopped onion

1/2 cup

chopped tomatoes

1/2 cup

chopped carrots

1/2 cup

chopped green beans

1/2 cup

turmeric powder

1/2 teaspoon

red chilli powder

1 teaspoon

coriander powder

1 teaspoon

cumin powder

1 teaspoon

mustard seeds

1 teaspoon

fenugreek seeds

1 teaspoon


1 teaspoon

tamarind paste

1 teaspoon


1 teaspoon


2 tablespoons

Salt to taste


2 cups



Step 1:

Heat oil in a pressure cooker.

Step 2:

Add mustard seeds, fenugreek seeds and asafoetida.

Step 3:

Add chopped onion, tomatoes, carrots and green beans.

Step 4:

Saute for a few minutes.

Step 5:

Add turmeric powder, red chilli powder, coriander powder and cumin powder.

Step 6:

Add Arhar Dal and mix well.

Step 7:

Add tamarind paste, jaggery and salt.

Step 8:

Add 2 cups of water and mix well.

Step 9:

Close the lid of the pressure cooker and cook for 3-4 whistles.

Step 10:

Once the pressure is released, open the lid and mix the sambar.

Step 11:

Serve hot with steamed rice.
