Wash and peel the amrud and cut into small cubes.
Heat oil in a pan and add cumin seeds, mustard seeds and fennel seeds.
When the seeds start to crackle, add the amrud cubes and stir-fry for a few minutes.
Add turmeric powder, red chilli powder, coriander powder, garam masala, sugar and salt.
Mix everything together and cook for 5-7 minutes or until the amrud is cooked through.
Serve hot with chapatis or rice.
