Heat oil in a pan over medium heat.
Add cumin, mustard and fennel seeds and fry for a few seconds.
Add onions, green chillies, garlic and ginger and fry until the onions are golden brown.
Add potatoes, cauliflower, green peas, tomatoes, turmeric powder, red chilli powder, coriander powder and salt and mix well.
Cover and cook for 10 minutes, stirring occasionally.
Add coriander leaves and mix well.
Serve hot with chapatis or rice.
