Ingredients

cubed potatoes

2 cups

cubed cauliflower

1/2 cup

cubed carrots

1/2 cup

cubed green beans

1/2 cup

cubed capsicum

1/2 cup

cubed onions

1/2 cup

cumin seeds

1/2 teaspoon

turmeric powder

1/2 teaspoon

red chilli powder

1/2 teaspoon

coriander powder

1/2 teaspoon

garam masala

1/2 teaspoon

oil

2 tablespoons

Salt to taste

Directions

Step 1:

Heat oil in a pan over medium heat.

Step 2:

Add cumin seeds and let them crackle.

Step 3:

Add onions and sauté until they turn golden brown.

Step 4:

Add potatoes, cauliflower, carrots, green beans, capsicum and sauté for a few minutes.

Step 5:

Add turmeric powder, red chilli powder, coriander powder, garam masala and salt.

Step 6:

Mix everything together and cook for 5-7 minutes.

Step 7:

Add 1/4 cup of water and cover the pan with a lid.

Step 8:

Cook for 10-15 minutes or until the vegetables are cooked through.

Step 9:

Serve hot with chapatis or parathas.
