large onions, finely chopped

large potatoes, peeled and cubed

large tomatoes, chopped

green chillies, finely chopped

cumin seeds

1 teaspoon

coriander powder

1 teaspoon

turmeric powder

1 teaspoon

red chilli powder

1 teaspoon

garam masala

1 teaspoon

oil

2 tablespoons

Salt to taste

Directions

Step 1:

Heat the oil in a large pan over medium heat.

Step 2:

Add the cumin seeds and fry for a few seconds.

Step 3:

Add the chopped onions and fry until golden brown.

Step 4:

Add the potatoes and fry for a few minutes.

Step 5:

Add the tomatoes, green chillies, coriander powder, turmeric powder, red chilli powder and garam masala.

Step 6:

Fry for a few minutes until the spices are fragrant.

Step 7:

Add 2 cups of water and bring to a boil.

Step 8:

Reduce the heat and simmer for 10-15 minutes or until the potatoes are cooked.

Step 9:

Add salt to taste and stir to combine.

Step 10:

Serve hot with chapatis or rice.
