Heat the oil in a large pan over medium heat.
Add the cumin, mustard, and fennel seeds and fry for a few seconds until fragrant.
Add the turmeric, coriander, red chili powder, and garam masala and fry for a few more seconds.
Add the asafoetida, onions, garlic, and ginger and fry until the onions are golden brown.
Add the tomatoes and fry until they are soft and mushy.
Add the potatoes, peas, and alu and mix well.
Add salt to taste and mix again.
Cover the pan and cook for 10 minutes, stirring occasionally.
Uncover the pan and cook for a few more minutes until the alu is cooked through.
Garnish with cilantro and serve hot.
