Heat the oil in a large pan over medium heat.
Add the cumin, mustard and fenugreek seeds and fry for a few seconds until fragrant.
Add the turmeric powder, onions, garlic, ginger and green chillies and fry for a few minutes until the onions are soft and lightly browned.
Add the potatoes and fry for a few minutes until lightly browned.
Add the fenugreek leaves and fry for a few minutes until wilted.
Add the garam masala and salt to taste and mix well.
Cover the pan and cook for 10 minutes, stirring occasionally.
Remove from the heat and stir in the fresh coriander leaves.
Serve hot with chapatis or rice.
