Heat oil in a large pan over medium heat.
Add cumin seeds, mustard seeds, fennel seeds, coriander seeds, bay leaves, cloves and cardamoms. Fry for a few seconds until fragrant.
Add turmeric powder, red chilli powder and garam masala. Fry for a few seconds.
Add onions and fry until golden brown.
Add tomatoes and fry until soft.
Add potatoes and green peas. Fry for a few minutes.
Add water and salt to taste. Bring to a boil.
Reduce heat to low and simmer for 15-20 minutes or until potatoes are cooked through.
Serve hot with chapatis or rice. Enjoy!
