cumin seeds

1 teaspoon

coriander powder

1 teaspoon

turmeric powder

1/2 teaspoon

red chili powder

1/2 teaspoon

garam masala

1/2 teaspoon

Salt to taste



Step 1:

Heat oil in a pan over medium heat.

Step 2:

Add cumin seeds and let them sizzle.

Step 3:

Add cubed potatoes, eggplant, onions, tomatoes, and bell peppers.

Step 4:

Stir fry for 5 minutes.

Step 5:

Add coriander powder, turmeric powder, red chili powder, and garam masala.

Step 6:

Stir fry for another 5 minutes.

Step 7:

Add salt to taste.

Step 8:

Cover the pan and cook for 10 minutes or until the vegetables are cooked through.

Step 9:

Serve hot with chapati or rice.
