Heat oil in a pan.
Add mustard seeds, cumin seeds, fenugreek seeds and green chillies.
Add ginger-garlic paste and sauté for a few seconds.
Add onion and sauté until it turns golden brown.
Add tomatoes and cook until they become soft.
Add potatoes and alu and mix well.
Add cumin powder, coriander powder, red chilli powder, turmeric powder, garam masala, amchur powder and dry mango powder.
Add salt to taste and mix well.
Cover the pan and cook for 10-15 minutes or until the potatoes and alu are cooked.
Serve hot with chapatis or rice.
