Heat oil in a pan over medium heat.
Add cumin seeds, mustard seeds, fennel seeds, bay leaves, cloves and cardamoms. Fry for a few seconds.
Add ginger paste, garlic paste, red chilli powder, coriander powder and garam masala. Fry for a few seconds.
Add onions and fry until golden brown.
Add tomatoes and fry until soft.
Add mashed potatoes and mix well.
Add water and bring to a boil.
Simmer for 10 minutes.
Add salt to taste.
Garnish with chopped coriander leaves.
Serve hot with chapatis or parathas.
