Heat the oil in a large skillet over medium heat.
Add the cumin seeds and let them sizzle for a few seconds.
Add the onion and garlic and sauté until the onion is softened and lightly browned.
Add the ginger, coriander powder, turmeric powder, red chili powder, and garam masala. Stir to combine.
Add the potatoes and cauliflower and stir to coat with the spices.
Cover the skillet and cook for 10 minutes, stirring occasionally.
Uncover the skillet and cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.
Add the cilantro and salt to taste.
Serve hot with chapati or rice. Enjoy!
