Heat the oil in a large skillet over medium-high heat.
Add the cumin seeds and let them sizzle for a few seconds.
Add the onions and sauté until they are lightly browned.
Add the potatoes and cauliflower and sauté for a few minutes.
Add the tomatoes, coriander powder, turmeric powder, red chilli powder, and garam masala. Stir to combine.
Cover the skillet and reduce the heat to low. Simmer for 10-15 minutes, stirring occasionally, until the vegetables are tender.
Add salt to taste and stir in the chopped cilantro.
Serve hot with chapatis or rice. Enjoy!
