Step 1:

Heat oil in a pan over medium heat.

Step 2:

Add cumin seeds and let them sizzle.

Step 3:

Add the chopped onion and sauté until it turns golden brown.

Step 4:

Add the cubed potatoes and carrots and sauté for a few minutes.

Step 5:

Add the coriander powder, turmeric powder, red chili powder, and garam masala. Mix well.

Step 6:

Add salt to taste and mix again.

Step 7:

Cover the pan and let the vegetables cook for 10-15 minutes, stirring occasionally.

Step 8:

Once the vegetables are cooked, add the chopped cilantro and mix.

Step 9:

Serve hot with chapatis or rice. Enjoy!
