Heat the oil in a large pan over medium heat.
Add the cumin, mustard and fennel seeds and fry for a few seconds until fragrant.
Add the onions and fry until golden brown.
Add the garlic, ginger and green chillies and fry for a few minutes.
Add the tomatoes and fry until soft.
Add the potatoes, garam masala, red chilli powder, coriander powder, cumin powder, amchur powder and salt and fry for a few minutes.
Add the water and bring to a boil.
Add the alu and simmer for 15-20 minutes until the potatoes are cooked through.
Serve hot with chapatis or rice.
