Peel and cut the potatoes into cubes.
Heat the oil in a large pan over medium heat.
Add the cumin and mustard seeds and fry for a few seconds until they start to crackle.
Add the potatoes and stir to coat with the oil.
Add the turmeric, red chili powder, coriander powder, garam masala, amchur powder, and salt. Stir to combine.
Cover the pan and cook for 10 minutes, stirring occasionally.
Uncover the pan and cook for an additional 5 minutes, stirring occasionally, until the potatoes are cooked through and lightly browned.
Remove from heat and stir in the chopped cilantro.
Serve hot. Enjoy!
