In a large bowl, mix together the besan, ajwain, red chilli powder, garam masala, amchur and salt.
Add the oil and mix until the mixture resembles breadcrumbs.
Add a little water and knead the mixture into a soft dough.
Divide the dough into small balls and roll each ball into a thin disc.
Heat the oil in a deep pan and deep fry the discs until golden brown.
Drain the alu bhujia on a paper towel and let it cool.
Serve the alu bhujia with tea or as a snack. Enjoy!
