Wash and dry the bhindi. Cut off the ends and slit each bhindi lengthwise.
Heat oil in a pan. Add cumin seeds and let them crackle.
Add the chopped onions and fry till they turn golden brown.
Add the chopped tomatoes and fry till they become soft.
Add the green chillies, coriander powder, turmeric powder, red chilli powder, garam masala and amchur powder. Fry for a few minutes.
Add the bhindi and mix well.
Add salt to taste and mix again.
Cover the pan and cook on low heat for 10-15 minutes, stirring occasionally.
Serve hot with chapatis or parathas.
