Heat oil in a pan over medium heat.
Add cumin, mustard, fennel and fenugreek seeds and fry for a few seconds.
Add turmeric, red chilli, coriander and garam masala powders and fry for a few seconds.
Add onion, tomatoes, green chillies, garlic and ginger and fry for a few minutes.
Add mashed potatoes and mix well.
Add salt to taste and mix well.
Cook for a few minutes until the potatoes are cooked through.
Garnish with chopped coriander leaves and serve hot.
