Wash and cut the eggplants into cubes.
Heat oil in a pan and add cumin seeds.
When the cumin seeds start to crackle, add the ginger-garlic paste and sauté for a few seconds.
Add the chopped onion and sauté until it turns golden brown.
Add the chopped tomato, green chili, coriander powder, red chili powder, turmeric powder, garam masala, amchur powder, and salt.
Sauté for a few minutes until the tomatoes are cooked.
Add the eggplant cubes and mix well.
Cover the pan and cook for 10-15 minutes until the eggplants are cooked.
Garnish with cilantro and serve hot.
